Butternut squash soup takes full advantage of this naturally sweet squash, the recipe makes this in to a simple and healthy soup that is delicious. This flavour for me really reminds me of winter sitting in front of a warm fire in a cosy place.
I have used the following ingredients: 1 Large Butternut Squash 2 medium potatoes 1/2 cup of milk
Begin this soup by peeling the potatoes and the squash if the skin is thick, cut in to chunks and boil well until really soft (about 10-15 minutes).
Once boiled put a cup of the boiled water in to a blender and drain the rest, now add the potato and squash to the blender and puree this. Finish by adding about half a cup of milk and mix well.
Serve in a bowl, I love to dip slices of nutty breads to get a real winter feeling.
